Clean Eating Southwestern 2 Bean Chicken (Saw It, Pinned It, Did It)


So to follow along w/ my post yesterday about clean eating and food prep. . .

I actually cooked on Sunday night!  This is a big deal - not b/c I can't cook but just b/c I never do.  Cooking for 1 is not that fun.  Plus I work at a place w/ a great cafeteria where I eat lunch every day.  But this week I've been bring this for lunch each day and it is SO good!

Clean Eating Slow Cooker Southwestern 2 Bean Chicken
(Makes approximately 10 cups)

Ingredients:

  • 4 raw, boneless, skinless chicken breasts (about 8 oz. each)
  • 1 (15 ounce) can pinto beans (rinsed and drained) or 1 1/3 cup home cooked beans
  • 1 (15 ounce) can black beans (rinsed and drained) or 1 1/3 cup home cooked beans
  • 1 (28 ounce) can diced tomatoes in juice, low sodium is best
  • 1 pound frozen and thawed organic corn (organic to avoid GMO corn)
  • 1 (12 ounce) jar of your favorite salsa, no sugar added

I actually cooked this in a 9x13 Pyrex dish.  I have an old slow cooker that does not have a timer.  So the oven worked just fine.  I cooked it for a little over an hour at 350 degrees.  Once the chicken was cooked I used two forks to shred it and then mixed the whole thing together.

It was really good!  I think when I make it again I will use a medium salsa as I used mild this time and I thing it needs a little kick!  But other than that I wouldn't make any changes.  

I'm trying to decide if I want to invest in a slow cooker - will I use it enough to make it worth it?  Decisions, decisions. . .

The Mavericks signed Chris Wright this week.  He is the first NBA player with Multiple Sclerosis.

Go Chris! You rock!!

Proud of the Mavericks for seeing Chris as an athlete and not an illness!!!!

    I am toying with the idea of getting a slow cooker too but my roommate said he would buy one so I have been holding off xo

  2. This is SO GOOD. I have made it in the crockpot before and it is delicious. I haven't made it in awhile actually...I probably need to do that! Hello, easy meal idea :) (and everybody knows I need that!)

  7. I will try to cook this when I buy some of the ingredients...looks good and healthy. We have the same question about a slow cooker...they are pretty high priced

  8. Looks yummy! And YES get a slow cooker! I think mine was $40 or $50 at walmart, but I LOVE it.
