Yesterday I made Macaroni and Cheese. I had promised my friend, Joana, that I would make it for her husband's 40th Birthday BBQ party. I thought I would post the recipe and step-by-step directions but I forgot to take pictures of a few of the steps. So you will have to settle for this! This is not the healthiest version of Mac and Cheese but it is the most delicious!
16 oz box of pasta (I use rotini and whole wheat pasta works great too)
2 cans of Campbell's Cheddar Cheese soup
4 cups shredded cheddar cheese
16 oz half and half
(If you really want to be healthier you could try it with a lower fat cheese and lower fat milk. Not sure how it would taste b/c I've always made it the unhealthy delicious way. Ha!)
Cook the pasta as directed on box. Drain and add to the cheese mixture.
Spray a baking dish with Pam then pour the mac and cheese mixture into the dish.
Bake at 350 degrees about 40 minutes. Enjoy!

This is my little buddy, Carter (aka Carlos and Joana's son). He is the cutest, happiest little guy and we had a lot of fun hanging out at the party! I'm still teaching him to say "Jodi" but no luck yet. Hopefully soon! :)
I just wish I had half as much energy as Carter (or any kid for that matter)! He was on the go the entire party.
Today I had "big" plans to go to the movies but was not feeling well enough for that. So instead I took a 4 hour nap (does that qualify as a nap or 1/2 a nights sleep)? I went out to do one errand (at one of my favorite stores - Christmas Tree Shop) which exhausted me and now I'm back in bed. I'm planning to go to work tomorrow and just hoping I can make it through the day.

I got my Red Sox tickets today! You know what that means. . . Spring is almost here! Emily and I got a 4 pack again and our first game is in April. I can't wait.
